Here’s a recipe for Assam Laksa (Suz’s favorite)

(Recipe for 4 persons)
500 grams of fish fillet
Spice ingredients for the broth
2 litres of water
1 heap tablespoon of chili powder
1 tablespoon of minced lemon grass
1 tsp of blue ginger (minced)
2 big onions (grounded)
2 tsp of shrimp paste (belachan)
8 pcs of assam gelugor (tamarind can be substitute)
Boil all the above ingredients for 5 minutes and simmer for another 10 minutes
Add seasoning :
1½ Tablespoon Salt
1 Tablespoon sugar
Next, we need a packet of thick vermicelli noodle. Soak for ½ and hour, then steep into a pot of boiling water, strain when the noodle is quite soft.
Garnish:
1 small cucumber shredded
1 small ice berg shredded
1 onion sliced
Some fresh mint
Some prawn paste (otak petis)

Many thanks for the recipe. I have been trying to find the type of rice noodles/laksa noodles as show in your picture. What is the exact name of this noodle and where to find/buy them?

many thanks for the recipe, just one question — here in New Zealand, tamarind comes in packets of paste. How much is right for this recipe?
