Curry Puff recipe

As promised, here is the curry puff recipe.

Pastry A

250gms plain flour

60gms soft butter

140mls vegetable oil

Pastry B

450gms plain flour

375mls cold water


  • Mix A into a soft dough and divide into 20 portions
  • Mix B and divide into 20 portions
  • Cover A dough with B dough
  • Roll into long strip with rolling pin
  • Using your hand to roll up into a sausage
  • Flatten again with a rolling pin
  • Then using your hand and roll into a sausage again
  • Cut into half
  • With inside up roll into a circle
  • Turn over and put in the filling (about ½ Tablespoon)
  • Fold in sides tightly with your thumb
  • Deep fry over medium to slow heat till light brown.


400 gms potatoes (cut into small cubes boil until soft)

2 brown onions (chop into bite size)

250gms mince meat

4 heaps tablespoon curry powder

Salt and sugar to taste

  • Add 50mls of oil into a frying pan
  • Add in the chopped onion fry till soft
  • Then add in the curry powder with 2 tablespoon of water
  • Add in the meat and stir until meat is cooked
  • Add in the potatoes and mix together with the curry meat
  • Cool the filling in the fridge before wrapping

Hi, I have tried making the curry puffs. Both dough ( oil base and water base) turned out to be very sticky. Are the ingredients of the right quantity?

Thanks for your feedback. I did experience stickiness the first time and it’s because you’ve knead the dough too long. Let me know you’ve still experience the same. Good luck~

Hiya! I tried the pastry part of this recipe over the weekend and it was YUM! The pastry was surprisingly crispy even when cooled. Definite keeper =)

Thanks for recipe
Is the gms is grams?cos both dough is too very sticky even when havent knead it.the end i add more flour.but the result is very good cripsy curry puff.can u tell which part i make the mistake so next time can make it better with ur recipe
