Simple + Quick Ipoh Hor Fun

I am sure some of you have been to Ipoh for this.  Maybe not? Here’s a simple and quick way to cook up Ipoh Hor Fun.

Ipoh Hor Fun Recipe

to serve 4

600 gm flat rice noodles
200 gm bea soots
80 gm chies
100 gm chick meat (cooked and shredded)
500 prawns (cooked and shelled)

For the soup
1. Fry 300 gm of shelled prawns with 1 Tbsp of oil until brown in color.
2. In a stock pot, boil 2 litres of chicken stock and add in the shelled prawns. Boil for 10 to 15 minutes on medium heat. Strain the stock from the prawn shell.
3. Add in seasoning, salt and a little rock sugar to taste.
4. Bring pot of water to a boil. Blanch the flat noodles, bean shoots and chives. Strain and place them into soup bowls. Garnish with shredded chicken mean and prawns. Pour the soup on top and serve.

i always thought ipoh hor fun was kind of dry and saucey, not soupy. this looks really delicious though! and simple. perfect for a quick meal.
