Yam Cake Recipe

250 grams rice flour
125 grams wheat flour (Tung Meen Fun)
2 ½ cups water (heat till quite warm)

250 grams yam (steam till cooked)
120 grams dried prawns (pound and fried till brown)
50 grams of fried shallots
Fresh spring onion, cut freshly chilli

Mix the rice flour, wheat flour and add in the warm water and add in ¾ tablespoon of salt,  1 tablespoon of rock sugar, 1 table spoon of vegetable oil or garlic oil ,  1 teaspoon of white pepper,  1 teaspoon of 5 spice.  Add in the steamed yam and mix all the ingredients thoroughly. Oil a stainless steel plate (22″ in diameter) before adding the mixture and steam for 45 minutes in high heat, add more water after 20 minutes.

Cool the yam cake before garnishing with fried dried prawns,  fried shallots,  fresh spring onion and freshly cut chilli.

I always have a headache measuring grams, just confusing for me being that I don’t have much measuring tools to work with.

I need some tips please. How do you cut the yam cake without sticking to the knife. I left it to cook before cutting and oil the knife and it still stick. Please help.

Did you leave it cool first before cutting? After steaming, leave the cake to cool. Then try cutting it. Hope it helps.

Hi, i followed your instructions n measurement but it come out as being abit too hard and seems there are more yam than it should be in..the hardness part ..is it due to water level too? perhaps my cup of water is too small?

It could be the measurement of water. It has to be exact.

i make my yam cake using 800gms of chopped purple skinned yam, with 600gm of rice flour with 1litre of water mixed well then pouring the mixture into 2.1litre of boiling water in a wok and stir till smooth. Then transfer into big oiled-based pan and steamed for 50 minutes at high eat. Add 4 soup spoonful of fried shallot oil to combine with the mixture will result in a smooth glossy yummie yummie Yam cake. Leave to cool b4 cutting. You knife should come out non-sticky. Yummie Yummie Rub Rub Tummie….!!

Hi. i just love yam cake! But i usually eat it and been served with two types of sauce, one is chili and another one taste like yong tau fu brown sauce. Is it the same brown sauce? how to make the chili and the brown sauce. i think it taste better with both sauces.
