Pineapple Tarts recipe

Pineapple Jam
2 pineapples
400 grams sugar

Combine the above and cook till thick.

125 grams butter
140 grams plain flour
65 grams self raising flour
1 big egg yolk
½ tablespoon condensed milk
½ teaspoon vanilla

Cream butter together with condensed milk vanilla till creamy before adding the egg yolk. Cream for another minute.

In a mixing bowl, pour in both flour, scrape the butter mixture into the flour to combine before rolling out to the thickness of ¾ or ½ cm. Use a cookie cutter to shape out. Roll the jam into tiny balls and put them in the middle of the cut pastries and heat in the oven at 180 degrees centigrade for 20 minutes or until slightly brown color appear.

The tart cutter is available in Australia, not that I know of. I bought it in Malaysia. good luck~

If you are Melbourne , then you are in luck , not only can you get the cutter , you can get the pineapple jam as well and they are great .

There is a shop in Preston market , run by a Malaysian which sells all baking needs . You can get various biscuit cutter ……….spolit for chioce

Kinda odd you don’t put in some cloves and cinnamon stick when cooking your pineapple tarts. Any reason for omitting these ingredients?

A very old lady I knew some 30 years ago used to bake the “best” pineapple tarts my tongue has ever tasted. Her recipe calls for those ingredients to be added when cooking the jam, plus two more “special” ingredients to finish it off (pastry and jam).

Will never reveal those two though. Sorry. Its what makes the difference between jam tarts that sit on the table all day or jam tarts that run out after an hour on the serving plate.
